Bricco del Padrone – Red wine

Grapes:
Pure Merlot (Bordeaux clone 181F) intensely thinned to obtain a limited production load
Vinification:
Destemming, maceration carried out for about 12-15 days, after racking the wine is placed in oak barrels for three-quarters of French oak and American oak quarter
Refining:
The wine is stored in oak barrels for a period of 12-16 months, depending on the year; a month before bottling is assembled in a steel tank for final finishing operations, after bottling is aged in glass for 6 months
Organolectic characteristics
Color:
Ruby red with purple veins dense and compact up to the cup edge.
Bouquet:
Fine, very complex, you can pick up notes of ripe blackberry, sweet licorice, chocolate and tobacco.
Taste:
Very full and harmonious, soft, great length and elegance.
Best with:
Wild venison, prepared with truffles, cheeses long maturation (Italian Gorgonzola, Stilton and Blue Cheese).
Best at temperature:
16-18° C, in large ballons
